nola's nutritional tip #7
gingerbread cookies

As Haylie stated a few weeks ago, there sure are a lot of wonderful smells coming from the kitchen this time of year.  And most of them are not good for us dogs.  Here’s another recipe that I simply love.  I “accidentally” ate about a dozen of them last year.  Mom had turned her back and the cookies literally came to life and jumped off the table – it really was an accident.

At least that’s what I told Santa!

Dog-Safe Gingerbread Cookies

1 ½ cups oat flour

1 ½ cups brown rice flour

1 tsp. baking powder

1 tsp. ground ginger

1 tsp. cinnamon

½ tsp. baking soda

1 egg

¼ cup safflower oil

½ cup molasses (blackstrap or regular)

¼ cup peanut butter (unsalted and creamy)

1 tbsp. apple cider vinegar

You can find the oat & brown rice flour at  Whole Foods, Fry’s and even some of the other regular grocery stores.

And, as always, organic ingredients are best!

Preheat oven to 350 degrees.  Combine all ingredients and mix thoroughly until a dough forms.  If the dough seems too soft or “wet”, just add a little more flour until it is the correct consistency.

Roll the dough out on a lightly floured surface to ¼ inch thickness – you can use some of the oat flour for this step.  Use a gingerbread boy and/or girl cookie cutter (or any shape your dog likes) to cut out shapes.

Place on an ungreased cookie sheet – they can be kind of close together as they don’t spread while cooking.

**no decorating with raisins – they are dangerous for us!

Bake 18-22 minutes or until the edges are golden brown (“golden”, get it?).

Let cool completely – out of our reach.

Store at room temperature in a covered container.  I don’t think they’ll last long!

Bone-Appetit!
