This
is hands down my favorite time of year. Every
weekend my mom gets up early and starts her
holiday baking. I usually lay right in the
middle of the kitchen floor just hoping
something drops down there. She makes toffee,
fudge and chocolate suckers but my favorites are
the cut out cookies. That frosting is so messy
and I always get to lick up the powdered sugar
that goes flying out of the mixer. My mom says
I’m not allowed to eat any of her goodies
because they aren’t good for me. I don’t
understand how there can be dozens of containers
full of goodies, but yet I can’t have a single
one. So one morning my mom said “Hayliebug,
since you are so sweet and the love of my life,
you deserve some special goodies too.” I perked
right up and was so anxious to see what was
coming next. Well, my mom baked me my very own
cut out cookies and I absolutely loved them, so
I want to share her recipe with you:
2 cups whole wheat flour
1 tablespoon baking powder
1 cup organic peanut butter (I prefer creamy!)
1 cup milk
Preheat oven to 375 degrees. Combine flour and
baking powder in a bowl. In another bowl, mix
the peanut butter and milk, then add to the dry
ingredients and mix well. Place dough on a
lightly floured surface and roll to ¼ inch
thickness, use cookie cutters to cut out shapes
(hearts or little gingerbread men are my
favorites!). Place on well-greased baking sheet
and bake for 20 minutes until lightly brown.
Cool on a rack and store in an airtight
container.
My mom seems to always be multi-tasking while
she is in the kitchen and that is not always a
good thing. While she is busy talking on the
phone about holiday parties, shopping and loving
this sweater weather (whatever that means), my
cookies oftentimes come out the color of a black
Labrador retriever because she is not paying
attention. You may have to help keep a close eye
on them through the oven door because apparently
they burn fairly easily.
I hope you get to enjoy some of these holiday
goodies, and as my mom would say every time I
get one “always remember how loved you are!”
